Meatballs with Marinara Sauce

Now here’s a recipe that doesn’t just taste like Italian food, but contains great health benefits too. The ground turkey and egg are the main source of protein in this recipe and add to the relaxing qualities that this meal includes, which comforting qualities are the same mark that the oregano and basil hit. Along with these wonderful benefits, the tomatoes and parsley add an addition of vitamins A and C to this recipe. Now how can you go wrong with a meal like this?

If you love the taste of Italian food, then this is a recipe that you’ll want to try.

Ingredients: (Makes 1 Serving)

  1. 4 oz extra lean ground turkey

  2. 1 tsp. Garlic Powder

  3. 1 Tbs. sweet onion, minced

  4. ½ tsp. sea salt

  5. ¼ tsp. black pepper

  6. 1 egg white, lightly beaten

Instructions:

Place all ingredients in a medium bowl and mix well. Shape into small meatballs. In a pan that has been lightly sprayed with cooking spray, brown the meatballs on all sides. Set aside.

Ingredients (Marinara Sauce): Makes 4 Servings

  1. 10 oz crushed tomatoes

  2. 1 garlic clove

  3. 2 Tbs. sweet onion

  4. 3 Tbs. fresh basil

  5. 4 Tbs. fresh parsley

  6. 1-2 tsp. oregano

  7. Dash of black pepper

  8. ¼ tsp. sea salt

  9. 1 packet stevia

Instructions (cont.):

Place all ingredients in a blender and process. Pour sauce in a medium pot and bring to a gentle boil. Add the meatballs. Cover and simmer for 20-25 min. Serve with Wasa crackers if desired.

*Serving size while on the diabetes or weight loss program is 1 serving meatballs with 1 serving sauce. Eat with permitted crackers and a serving of vegetables for a complete dinner.
