This is a very nutritious and very tasty recipe for a Quinoa salad. Quinoa has a large quantity of health benefits. Quinoa is naturally gluten free. It is one of the few plant foods that are considered to be a complete protein. So you get protein out of this food without all of the animal fats.
Quinoa is comprised of all nine essential amino acids. These break down proteins in our cells so they can be used to the benefit of our bodies.
The black beans in this recipe are a great source of protein and fiber. They are a wonderful blood sugar regulator. The fiber aids in food digestion.

Ingredients:
2 cups quinoa, rinsed well
4 cups water
2 cans black beans, drained and rinsed
4 medium tomatoes, diced
8 green onions, chopped
1 cup chopped, fresh cilantro
Dressing:
1 Tbs. grated lime zest
½ cup fresh lime juice
6 Tbs. extra virgin olive oil
2 Tbs. maple syrup
1 ½ tsp. sea salt
½ tsp. fresh ground pepper
Instructions:
Boil water and add quinoa. Simmer on medium-high for about ten to twelve minutes.
Turn off heat. Cover and let stand for ten minutes. Strain any excess water.
Prepare dressing by placing all dressing ingredients in a blender for a couple of minutes.
In a bowl, place Quinoa and half the dressing and toss well. Stir in the remaining ingredients and the other half of the dressing. Gently toss again and serve.
