This colorful pasta salad is sure to be a summer favorite! Full of dietary fiber, the spelt, pasta, and broccoli add to this dish an incredible source of antioxidants–with the dressing from this salad providing your body with the healthy fats it needs. Now how can you turn down all this goodness?
Ingredients (6-8 servings)
1, 16 oz package of spelt or veggie short pasta
12 oz frozen broccoli
¼ – ⅓ C red onion, thinly sliced
½ C frozen organic corn
1 red bell pepper, chopped
⅔ C Artichoke, drained and chopped
⅓ C Kalamata olives, sliced
2 roma tomatoes, cut up
Directions: Cook pasta according to package directions. When done, add frozen broccoli to pot and drain together. Place cooked pasta and broccoli in a large bowl then add the rest of the ingredients in the order given. Add dressing to taste and gently toss. Let sit for 10 minutes then serve.
