Turkey Cucumber Roll Ups

Ingredients (1 serving):
Large peeled Cucumber Slices (using a vegetable peeler, take off cucumber skin, then continue to peel the cucumber around the seeded middle)
3 slices of real, unprocessed turkey deli meat
Half a tomato, diced
Shredded lettuce
Directions:
Place together 3 slices of cucumber down, add slice of turkey, lettuce and tomato. Roll carefully and serve immediately. Continue to form the roll ups. This will yield 3 or more roll ups.
